&lt;p&gt;Yesterday was Don&amp;#8217;s 23rd Birthday so naturally I had to make cupcakes. His favorite dessert are rainbow cookies, so i used that for some inspiration and came up with this! &lt;p&gt;My friend Mary&amp;#8217;s Birthday cupcakes. She&amp;#8217;s mildly obsessed with anything to do with Nightmare Before Christmas so I came up with these. The cupcake itself is a Chocolate Peanut Butter Cupcake, (Chocolate cupcake with peanut butter buttercream frosting) I added a reese&amp;#8217;s in the middle of the cakes for a little surprise. The decorations are chocolate covered oreos. &lt;/p&gt;

&lt;p&gt;Hey Everybody! I feel like its been such a long time since I&amp;#8217;ve posted something! These are Chocolate Milkshake cupcakes that I made for my friend Andrew&amp;#8217;s Birthday. He&amp;#8217;s a fan of chocolate milkshakes, so I tried to draw a little inspiration from that creamy chocolatey goodness. The middle of the cupcakes are actually filled with a surprise! Here&amp;#8217;s the recipe:&lt;/p&gt;
&lt;p&gt;Ingredients:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Box of devil food cake mix &lt;/li&gt;
&lt;li&gt;Filling (1 Tub of CoolWhip and cocoa Powder&amp;#8230;I used the ghirardelli semi-sweet)&lt;/li&gt;
&lt;li&gt; Whip Cream (I made this from scratch with heavy cream, vanilla, and powdered sugar)&lt;/li&gt;
&lt;li&gt;Maraschino cherries for decorations&lt;span&gt; &lt;/span&gt;&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Directions: &lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Make cupcakes according to directions on the packaging. Set cupcakes aside to cool completely (This is important! if the cakes are warm it will melt the filling)&lt;/li&gt;
&lt;li&gt;In a cold bowl mix the cool whip with the cocoa powder&amp;#8230;add to desired taste. Place into a piping bag and freeze for at least a 1/2 hour. &lt;/li&gt;
&lt;li&gt;In a bowl whip the heavy cream until stiff peaks are just forming,  for every cup of heavy cream used add 1tsp of vanilla and 1tbs of confectioners sugar. mix until mixture is holding stiff peaks. (Becareful not to overmix. cream will turn into a thick butter consistency and will not pipe correctly) &lt;/li&gt;
&lt;li&gt;Time to assemble! with an apple corer remove the inside of the cupcake. fill in the middles with the cool whip filling. No milkshake is complete with the whip cream, cherry and most important the bendy straw!&lt;/li&gt;

&lt;p&gt;Happy Birthday to my friend Lindsay! Cannoli cake is her favorite type of cake so I fun-sized them into a yummy cupcake form. 3 different components but all of which are simple. &lt;/p&gt;
&lt;p&gt;Frosting Ingredients:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;16oz of Mascarpone Cheese&lt;/li&gt;
&lt;li&gt;3/4c of confectioner&amp;#8217;s sugar&lt;/li&gt;
&lt;li&gt;2tsp of almond extract&lt;/li&gt;
&lt;li&gt;1tsp of vanilla extract&lt;/li&gt;
&lt;li&gt;1/4c of whole milk&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Filling Ingredients: &lt;/p&gt;
&lt;ul&gt;&lt;li&gt;15oz of Ricotta cheese (i used the part skim one but i think it should be fine with the whole milk as well)&lt;/li&gt;
&lt;li&gt;1/2c confectioners sugar&lt;/li&gt;
&lt;li&gt;1tsp cinnamon &lt;/li&gt;
&lt;li&gt;1tsp almond extract&lt;/li&gt;
&lt;li&gt;1tsp rum extract&lt;/li&gt;
&lt;li&gt;1tsp vanilla extract&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Cake Ingredients:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 Box of Yellow Cake mix (and the ingredients to make it&amp;#8230;simple right?)&lt;/li&gt;
&lt;/ul&gt;&lt;div&gt;Decorations: Mini chocolate chips&lt;/div&gt;
&lt;p&gt;Directions: &lt;/p&gt;
&lt;ol&gt;&lt;li&gt;make cake according to instructions on box, set aside to cool&lt;/li&gt;
&lt;li&gt;in a bowl mix together all ingredients for filling, fill cupcakes! *to fill cupcakes i used apple corer to remove the center of the cupcakes*&lt;/li&gt;
&lt;li&gt;In a separate bowl, mix together all ingredients for the frosting. be careful as to not overmix. mix until just creamy, mixture will be liquidy at first but will firm up.&lt;/li&gt;
&lt;li&gt;Frost and decorate with some mini chocolate chips! Enjoy!&lt;/li&gt;

&lt;p&gt;Ingredients:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;mini eggplant&lt;/li&gt;
&lt;li&gt;brown rice&lt;/li&gt;
&lt;li&gt;sliced tilapia fillets &lt;/li&gt;
&lt;li&gt;fresh basil&lt;/li&gt;
&lt;li&gt;olive oil&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Directions&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;cut the eggplant width-wise into 2 inch sections&lt;/li&gt;
&lt;li&gt;cut out the middle of the eggplant to create a little cup (i used a knife)&lt;/li&gt;
&lt;li&gt;In a pre-heated oven of 350 degrees. place the eggplant onto a baking dish covered in olive oil, it&amp;#8217;ll help give it some flavor and not stick. &lt;/li&gt;
&lt;li&gt;bake for 25-30 minutes, take out of oven and add seasonings salt, black pepper, the fresh basil, and a little bit of garlic powder. place back into oven&lt;/li&gt;
&lt;li&gt;after 15 minutes take out of oven and stuff with rice and fish mixture. then into the oven it goes again for another 15 minutes. after that sprinkle some parm cheese on it. 5 minutes in oven. then done!!!!&lt;/li&gt;
&lt;li&gt;serve and enjoy!&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;*I like it made this way but some people would prefer it with a sauce since it can be a bit dry. I can&amp;#8217;t recommend anything but if i were to try it with a sauce i would try a clam sauce or a vodka sauce*&lt;/p&gt;

&lt;p&gt;Ingredients:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;2 eggs&lt;/li&gt;
&lt;li&gt;vanilla (about 1tsp&amp;#8230;i don&amp;#8217;t really like measuring things)&lt;/li&gt;
&lt;li&gt;1 cup sugar&lt;/li&gt;
&lt;li&gt;1/2 cup butter &lt;/li&gt;
&lt;li&gt;3/4 cup all purpose flour&lt;/li&gt;
&lt;li&gt;half a bar of unsweetened chocolate&lt;/li&gt;
&lt;li&gt;2 handful of chocolate chips (semi-sweet)&lt;/li&gt;
&lt;li&gt;mini-marshmallows&lt;/li&gt;
&lt;li&gt;graham crackers&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Directions: &lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Pre-Heat oven to 350 degrees F. In a small saucepan melt butter on low heat add chocolate and 1 handful of the chocolate chips. Melt completely and remove from heat. Set aside and allow to cool down to room temp&lt;/li&gt;
&lt;li&gt;Prepare the pan that you have chosen to use. I used a mini loaf pan!&lt;/li&gt;
&lt;li&gt;when chocolate and butter mixture is cooled down, transfer to mixing bowl and add sugar, eggs, and vanilla. Mix well&lt;/li&gt;
&lt;li&gt;Add flour (remember not to over-mix!)&lt;/li&gt;
&lt;li&gt;Separate half the batter. In one half add Marshmallows and in the other half add chocolate chips. &lt;/li&gt;
&lt;li&gt;Start layering brownies. chocolate chip batter on the bottom, i then added a single piece of graham cracker and layered the marshmallow batter over top. &lt;/li&gt;
&lt;li&gt;Bake for about 20 minutes!&lt;/li&gt;
&lt;/ul&gt;&lt;div&gt;*the marshmallows will &amp;#8220;explode&amp;#8221; (disappear) when baked&amp;#8230;.to get the white marshmallow look (picture1) right when the brownies are just about done take them out and add fresh marshmallows to the top&amp;#8230;.just press them right in!*&lt;/div&gt;

&lt;li&gt;Ham ends (ask for these from the deli - they throw them out at the end of the day anyways so its really inexpensive)&lt;/li&gt;
&lt;li&gt;Swiss Cheese (sliced thick)&lt;/li&gt;
&lt;li&gt;I jar of white sauce (any flavor that you like)&lt;/li&gt;
&lt;li&gt;Veggies (i used broccoli and mushrooms)&lt;/li&gt;
&lt;li&gt;Bread crumbs&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Directions:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Cook pasta to al dente. Drain and let sit in baking dish. (season pasta to tasta&amp;#8230;.i used oregano, parsley, salt, and black pepper)&lt;/li&gt;
&lt;li&gt;Heat jar of sauce in pot. add veggies let simmer for about 10 minutes. &lt;/li&gt;
&lt;li&gt;As the sauce simmers clean chicken. roll swiss cheese and ham into chicken. Place on second baking dish. cover rolled chicken in bread crumbs. &lt;/li&gt;
&lt;li&gt;bake both dishes at 425 degrees F. the pasta for about 10 minutes. and the chicken for 15-20minutes. (after the chicken is done i sprinkled some cheddar cheese on top and baked for another minute)&lt;/li&gt;
