Red Velvet Cake Bites

I made these for valentine’s day! =] Just follow the recipe and directions for making cake pops! =] ENJOY!!

I want to learn how to make ravioli! it would be a fun learning experience and think of all the things you can do with it =] yummy!

S’more brownies

A recipe that’s extremely easy to whip up and not too many special ingredients are required. Something short, sweet, and simple…my kinda treat! 

Ingredients:

  • 2 eggs
  • vanilla (about 1tsp…i don’t really like measuring things)
  • 1 cup sugar
  • 1/2 cup butter 
  • 3/4 cup all purpose flour
  • half a bar of unsweetened chocolate
  • 2 handful of chocolate chips (semi-sweet)
  • mini-marshmallows
  • graham crackers

Directions: 

  • Pre-Heat oven to 350 degrees F. In a small saucepan melt butter on low heat add chocolate and 1 handful of the chocolate chips. Melt completely and remove from heat. Set aside and allow to cool down to room temp
  • Prepare the pan that you have chosen to use. I used a mini loaf pan!
  • when chocolate and butter mixture is cooled down, transfer to mixing bowl and add sugar, eggs, and vanilla. Mix well
  • Add flour (remember not to over-mix!)
  • Separate half the batter. In one half add Marshmallows and in the other half add chocolate chips. 
  • Start layering brownies. chocolate chip batter on the bottom, i then added a single piece of graham cracker and layered the marshmallow batter over top. 
  • Bake for about 20 minutes!
*the marshmallows will “explode” (disappear) when baked….to get the white marshmallow look (picture1) right when the brownies are just about done take them out and add fresh marshmallows to the top….just press them right in!*

Out of the oven and into my tummy! i hope you enjoy this recipe!

Dinner on a budget

Last night I put together something that will last me a while and the whole dinner costs less than $15. -Chicken cordon bleu over pasta- 

Ingredients:

  • 1 box of pasta
  • Chicken breasts (i used chicken thighs because they were on sale)
  • Ham ends (ask for these from the deli - they throw them out at the end of the day anyways so its really inexpensive)
  • Swiss Cheese (sliced thick)
  • I jar of white sauce (any flavor that you like)
  • Veggies (i used broccoli and mushrooms)
  • Bread crumbs

Directions:

  • Cook pasta to al dente. Drain and let sit in baking dish. (season pasta to tasta….i used oregano, parsley, salt, and black pepper)
  • Heat jar of sauce in pot. add veggies let simmer for about 10 minutes. 
  • As the sauce simmers clean chicken. roll swiss cheese and ham into chicken. Place on second baking dish. cover rolled chicken in bread crumbs. 
  • bake both dishes at 425 degrees F. the pasta for about 10 minutes. and the chicken for 15-20minutes. (after the chicken is done i sprinkled some cheddar cheese on top and baked for another minute)

    Pondering sweets

    I’m wondering what the next thing i should try to make is. talk about difficult choices!

    Cake Pops

    Finally a super fun way to present cakes in pieces where you won’t feel so guilty eating it! these little bite sized cakes are fun to make especially with other people! WARNING - cake pops take a long time to properly prepare!! i used all store bought items! it doesn’t make sense to make it from scratch…you will see why! lets begin!

    Ingredients

    • 1 box cake mix (i used strawberry) + ingredients needed to make cake
    • 1 can of frosting
    • 2 bags of candy melts
    • lollipop sticks 
    • 1 piece of styrofoam
    • sprinkles (or other decorations)

    Directions

    • Make cake according to directions. cool cake completely. combine can of icing with mashed up cake. refrigerate overnight or freeze for an hour.
    • roll into balls (about 1inch)…(if the cakes balls are too big it may be too heavy for the sticks)
    • freeze balls for about 1/2 hour. melt the candy melts. dip the tip of the sticks into the candy melts. (do this right before the cake is ready to come out of the freezer) push sticks into the cake balls. freeze again for about 10 minutes. remove cake pops from freezer and coat in the candy melts. (at this point the cake should stay on the sticks even if you dip it into the melted candy melts.
    • before the candy coating dries (it dries very quickly!) dip into sprinkles or decorate with other fun yummy things!

    ***a couple of tips!***

    • the candy melts will be ready to use at a very particular time. after melting let sit for about 5 minutes so that the consistency will be a little thicker =] melt again if the candy starts clumping
    • be sure to refrigerate until serving
    • dipping the sticks into the candy before sticking into the cake balls will help the cake pops stay together especially when dipping
    • ENJOY!

    Meal time for the sick

    For people like me, that’s always eating on a budget this is a simple recipe that will let you have a good hot meal and good to save some for later. At time time I’m also sick and wanted something filling and nourishing. I hope you enjoy!

    Ingredients: 

    • elbow pasta (i used about 1 cup)
    • 1/2 can condensed cream of chicken soup 
    • 1/2 can of water
    • salt
    • veggies (i used broccoli)
    • bit of chedder cheese

    Directions:

    • cook pasta to right before al dente, drain pasta into separate bowl
    • bring soup and water to boil. 
    • add veggies and pasta. 
    • let simmer on low heat for about 10 minutes. 
    • add cheese and let simmer for another 2 minutes.
